3 ingredient soup (it’s amazing)

This soup is blooming delicious and even more importantly it has just three ingredients which means as well as being tasty it’s also so so simple to make. Putting it plainly, if I can make it you can too! It was so good that my meat-eating husband asked for second portions after trying it and ditched his Pea and Ham soup, declaring that mine was “so much nicer.” This of course gave me instant gratification – although the photo doesn’t quite do it justice and I realise it looks like a bowl full of mush I promise you it’s worth it. One cauliflower and broccoli made enough for two main meals and enough left overs for lunch so it’s a bargain too…convinced? I hope so…

Ingredients:

  • 1 Cauliflower
  • 1 Broccoli
  • Seasoning: garlic, salt and pepper and a sprinkling of cheese to taste

 

Method:

Boil the cauliflower and broccoli in vegetable stock till it’s mushy but not full of water. Put in a blender and whiz till all lumps are out. Transfer back to the saucepan and add seasoning and serve hot!
