I love mock meat.
I’ve never understood why so many meat eaters have a problem or issue with vegetarians and vegans having mock meat versions of the real thing. The fact is it’s not the real thing, so why does it matter if we like to make our lives a bit easier by pairing foods together that makes cooking just that a little bit easier?
I absolutely love Linda McCartney’s new vegetarian shredded hoisin duck. I tried it for the first time at the weekend and paired it with cauliflower rice, mushrooms, spring onion and spinach and I have to admit it was to die for! I’m really into meal prep at the moment and made enough for four lunches that would tie me through most of the week. It was so easy to do – I literally cooked the lot in the oven and then split it all into four portions.
I’ve been trying to go to the gym during my lunch breaks at work and by the time I’m finished I’m absolutely ravenous and this meal is the perfect mix of protein and good carbs.
